Winery Notes

September 2006

So much to do, so little time! Harvest approaches or has started if your growing Siegerrebe, and early starts / late nights are upon us! Everything should be serviced, cleaned and ready to use. Growers will be bringing in bunch and berry samples for analysis, and waiting for the go!

Things to consider:

  • Plan, plan, plan. Harvest is obviously the busiest time in the winery, and it is essential that everything goes like clockwork, mistakes are easy to make if you're under pressure and can prove disasterous.
  • The final plan of wines to be produced may not be written in stone, but you should have a good idea so you know what is happening to the fruit as it arrives. The best wines start in the vineyard with management to suit the final wine style.
  • Take time for some experiments. You only get one chance a year to make your wine, and it is important to keep striving to improve. Try new yeast strains, fermentation techniques or temperatures, maceration, enzyme treatments, etc, etc...
